It's worth choosing a model with some headroom: about 20–30% above your actual requirements. As a guide: office computers 300–450 W, gaming computers 550–750 W, workstations and systems with powerful components 800 W and more.
It's an energy efficiency certification. The higher the level (Bronze, Silver, Gold, Platinum, Titanium), the less energy is wasted as heat and the quieter the fan runs. 80 PLUS Gold is the optimal choice.
In a non-modular power supply all cables are permanently attached, in a semi-modular one some cables can be detached, and in a modular one you can configure all the cabling. A modular PSU makes it easier to keep the case tidy and improves airflow.
